Homemade Chocolate Icing

My first try at homemade icing.  And I gotta say.  I rocked it.  I will never buy chocolate icing again.

You will need
1 1/2 cup powdered sugar
1/2 cup softened unsalted butter
1 teaspoon vanilla
2 Tablespoons milk
1/3 cup (or to taste) cocoa powder

I just used a large spoon but you could use beaters if you wanted.
Stir or beat powdered sugar and butter until smooth.  Add in the rest and stir or beat until well mixed.
Add more milk if it is too thick.
And that is it.  So Simple.  So Good.
I was able to cover two dozen cupcakes with this.

Creamy Ramen noodles.

So So good.  Creamy Ramen noodles.  Cook the ramen noodles in 2 cups water for 3 minutes.  Drain the water.  Add 1/3 cup milk and 1 Tbs butter and the ramen mix.  Heat until the butter melts.  So easy and so good.  You can use any flavor ramen.  I have been hooked on pork flavor right now.

Cake cookies


These cookies are so light and fluffy and so easy to make.  I think I have a new favorite chocolate chip cookie.


Heat oven to 350 degrees.

Mix together
1 cake mix.  I used yellow but will try others in the future.
1/2 cup oil
2 eggs
1 tsp vanilla
2 Tbsp vanilla pudding mix (not required, I just like vanilla)
3/4 cup chocolate chips.  (Less or more as desired)

Spoon out balls onto a baking sheet.  Bake for 12 - 14 minutes. ( I would start out with 10 min and adjust as necessary.  I usually have to bake for longer then most recipes.)

This made about 3 1/2 dozen cookies.

Just a update.  I used Pillsbury cake mix the first time and they turned out soft and chewy.  I used Duncan Hines the last time I made them and they were crunchy.  So I think the softness of the cookies depends on the cake mix.
